This Vegan Tofu Scramble is deliciously cheesy and comes together in a matter of minutes with only a few simple ingredients. It’s the perfect breakfast staple when you need to whip up something quick during the weekday, but can also be such a treat on the weekend. This scramble has an eggy flavor and a creamy texture that’s incredibly similar to the “real” thing!

I love savory and salty foods. Before I went vegan, one of my favorite things to eat for breakfast one the weekends was an egg scramble. This Easy Vegan Tofu Scramble recipe satisfies my cravings! It’s delicious with just a few key ingredients, but it can also be danced up to include a combination of different vegetables.

What kind of tofu should I use?

To get a fluffy and creamy texture, I like to use Soft Tofu or Silken Tofu. I have made this recipe numerous times with Firm Tofu, and I think it does the trick if that’s all you have on hand. However, do note that the end result will be a tougher, denser and chewier scramble. If that sounds like something your taste buds would prefer, than Firm Tofu may be the best pick for you.

Can I add veggies to the Tofu Scramble?

Absolutely! The tofu cooked with onion and spices make it delicious on its own, but it also works well paired with vegetables. There’s an infinite number of possibilities! My top recommendation is to add a leafy green, like spinach or kale. For an entirely different approach, I love to add sliced red and green bell peppers, along with canned black beans.

This Vegan Tofu Scramble is a delicious staple! Nutritional yeast gives it an amazingly cheesy flavor. Only a few ingredients to whip up a simple and quick breakfast during the weekday or on the weekend.

  1. In a pan, add olive oil on medium heat. Add the onions and sauté for 3-5 minutes, or until the onions start to become soft and slightly translucent.

  2. Add the tofu to the pan. Using a spoon or your hands, carefully break up and crumble the tofu into bite-sized pieces. 

  3. Add nutritional yeast, garlic powder, turmeric, and salt and pepper. Mix the tofu and the spices well, and let it continue to cook for about 10 minutes.
